Two likes! Seeing as I think that’s the most likes ever on a post, and these things are pretty easy to make, I figure I should share the wealth and post a recipe. They were great with fried eggs, and I sent the leftovers to work with Jota for him to have with hummus as a snack.
Sorry in advance for my shoddy measurements and procedure, but my cooking style is the exact opposite of my baking style. I just throw shit together that I know will work.
Ingredients:
about a cup of cooked quinoa
2 eggs
1 tbs Cajun seasoning (Tonys’!)
few pinches of salt
1/2 onion, finely chopped
2 tbs coconut flour for gluten free (sub any flour you want, or bread crumbs)
Process:
Mix everything together. Scoop on to a baking sheet with an ice cream scoop, and press flat. Freeze while you prep/make the rest of your meal. Fry in about an inch of oil, until golden brown. Inhale.
